Prepare the noodles by cooking them in boiling water until they soften. Drain & reserve. In a large sauté pan heat the olive oil over medium heat. Add the sliced onions until caramelised. Add the shrimp and sauté for 1 minute. Add the sweet chilli sauce (as much as you like), mix for a few minutes. Reserve.
Place the convex side of the lettuce hearts on a plate, fill them with noodles, add the shrimps, and sprinkle with thyme. Enjoy!
