Soup with Spinach, Shrimp and Dill

Soup with Spinach, Shrimp and Dill

YOU WILL NEED (for 4 people)

  • 250 g of Alion spinach cut into small pieces
  • 4 tablespoons olive oil
  • 1 clove of chopped garlic
  • 1 small onion, thinly sliced
  • 1 scallion cut into thin strips (like matchsticks)
  • 1 liter of vegetable broth
  • 100g chopped tomatoes (canned)
  • 2 tablespoons of chopped fresh dill from Alion
  • 4 jumbo boiled shrimp, peeled and cut into rings


  1. In a saucepan lightly sauté the onion and garlic in olive oil
  2. Add the scallion
  3. Add the shredded carrot and continue sautéing
  4. Add the chopped tomatoes and stir
  5. Pour the broth in the mix and wait until it boils
  6. Add the chopped spinach and season to taste
  7. Finally, check the taste and serve with slices of boiled shrimp and chopped dill
